Corn Chip Marshmallow Squares

Ingredients

  • 200g unsalted butter, cubed

  • 700g marshmallows, divided

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 2 bags of Neal Brothers Organic Original Corn Chips, slightly crushed

  • Flaky salt, to finish

Method

  1. Grease a large baking pan with butter and then line it with a parchment paper sling. Grease the parchment as well to prevent the squares from sticking.

  2. Cut 100g marshmallows in half and set aside.

  3. Add cubed butter to a large, heavy-bottomed pot over medium heat. Stir constantly until butter melts and becomes foamy. Keep stirring until the foam starts to die down and you see the browned milk solids on the bottom of the pan. Add remaining 600g of marshmallows to the brown butter and stir until smooth. Add cinnamon, vanilla and stir again. 

  4. Remove pot from the heat. Working quickly, pour corn chips and halved marshmallows into marshmallow mixture and stir until evenly coated.

  5. Add mixture to the baking pan. Use a greased spatula to press corn chips into pan. Sprinkle with flaky salt. 

  6. Let cool until firm and then slice into squares with a greased knife.
