Vegetarian Chili

Vegetarian Chili

Serves: 6

Ingredients
2 Tbsp olive oil
1 medium white onion, diced
3 garlic cloves, minced
1 small jalapeno, finely diced
2 celery stalks, diced
1 tsp smoked paprika
1 tsp chili flakes
1 tsp cumin
Salt and pepper, to taste
2 Tbsp tomato paste
Neal Brothers Organic AHHHH-rrabbiata Pasta Sauce
2 tsp cocoa powder
1 can kidney beans
1 can black beans
1 cup vegetable broth
1 can corn
½ lime, juiced

Method

Toppings: Neal Brothers Organic Original Corn Chips, Avocado, sour cream, pickled onions, cilantro, lime slices

  1. Heat oil in a dutch oven over medium-low heat. Add onion, garlic, jalapeno, celery, spices, salt and pepper. Stir and cook until soft (about 6-8 minutes).
  2. Add tomato paste and cook again for 2 minutes. Stir in pasta sauce, cocoa powder, beans and broth. Cover and simmer for 20-30 minutes, stirring occasionally.
  3. Add corn and lime juice. Season to taste with more salt and pepper.
  4. Serve chili with desired toppings and corn chips.
