Makes 4 tacos
Ingredients:
8 pieces of bacon
¼ cup Neal Brothers Classic BBQ sauce
1 tsp white wine vinegar
4 eggs
Neal Brothers Sweet Heat salsa
3 Tbsp unsalted butter
Salt and pepper, to taste
Taco shells/Tortillas
Toppings: Sliced avocado, crumbled cotija or feta cheese, pickled red onion, cilantro, lime wedges
Method:

Preheat oven to 375°F. Line a large baking sheet with parchment. Arrange the slices of bacon on top.

Mix together bbq sauce and vinegar. Brush sauce onto the bacon. Bake for 15 minutes, flip bacon and brush the other side. Bake for another 12-13 minutes.

While the bacon cooks, crack eggs into a medium bowl. Stir in a heaping tablespoon of salsa.

Melt butter in a pan, add whisked eggs and cook until you reach your desired scrambled egg consistency. Season to taste with salt and pepper.

Warm taco shells. Top with avocado, salsa, eggs, bacon, cheese, onion and cilantro. Serve immediately.
